Alessandro Viola runs a small winery west of Palermo in Sicily, guided by the ideal of letting wine live in harmony with nature. The winery is completely free of pesticides and chemical fertiliser. Alessandro Viola and other natural wineries in Sicily have paved the way for young winemakers, and today 90% of all new wineries in Sicily are natural.
Alessandro's wines are true farmers' wines. He is against heavy industry in winemaking and gives as an example white wines that are as clear as water. True white wines shouldn't be that clear. With mass production and this great clarity, flavour, aroma and character are lost.
Alessandro draws a lot of influence from the Jura in France and stresses that his winemaking carries its mark. Oaked wines shouldn't taste as though they've lain long in oak, and fresh acidity should characterise the wines. The wines should therefore be powerful but also delicate and quite easy to drink.
