In geology, a “neck” is a type of volcanic plug left behind in a volcano after weathering and erosion. Here Sylvain's Grenache grapes come from a basalt neck, and the wine is made by carbonic maceration. The aroma is lively, marked by flowers and red fruit. A clean, fresh wine full of energy and minerality. It disappears quickly, with fine tannins and good structure. It goes perfectly with lamb chops or chicken with grilled vegetables.
