Olivier Cohen first developed a passion for natural wine while working in a wine bar in Nice. When that was no longer enough for him, he decided to learn to make his own wine, training with several renowned French winemakers, including Thierry Allemand in Cornas. Eventually, in 2014, he acquired several parcels (7.5 hectares of organic vines) in different terroirs in Hérault, Languedoc, and set out to make his own wines at just 26 years old.
