Axel Prüfer was born and raised in East Germany but moved to the south of France at a young age to start a career in winemaking. He settled in the Languedoc in 2003, where he founded his winery Le Temps des Cerises (The Cherry Season).
It isn't easy to make delicate, fresh wines in an environment as hot as the Languedoc, but Axel manages it year after year. Picking the grapes at exactly the right moment and a gentle touch in the cellar are crucial, and Le Temps des Cerises goes all out to be as precise as possible given the conditions each year. He makes delicious wines in a natural way with as little intervention as possible - many of his wines have no added sulphur. In Axel's view, winemaking is about letting the grapes express their true character.
A fun fact about Axel is that the borders of his vineyards are strewn with human hair, which he collects from nearby hair salons to scare the local wild boar away from eating the grapes. People never run out of ideas in France!
